OLM Chef Mark Elsetinow is harvesting lettuce grown by our 1st grade in the hydroponic fork farm to use for Friday’s salad. Talk about fresh! Chef Mark comes to OLM from the Restaurant School in Philadelphia. He has extensive experience in Philadelphia fine dining establishments including, Brasserie Perrier, The Ritz Carlton, and Chanterelles to name a few.
